poached salmonw/creamy piccata sauce w/capers

1lb.salmon,2tbl lemon juice,1/4c lite sour cream,2tbl oil,1shallot minced,4tsp capers,1/4 tsp salt,1cwhite wine Poach salmon in 1/2c wine and enough water to cover fish. bring to boil then simmer turn and cover 5. remove from heat. in a skillet add oil and shallots cook to soft then add 1/2 c wine reduce for 1 min then stir in lemon and capers cook 1 min remove from heat and stir in sour cream and salt. top salmon and garnish w/fresh dill serve this also work's with chicken and baby artichokes . as long as you have a protien and something brined it is delicious!

oyster stew

1/2 c butter,1c minced celery, 3tbl minced shallot,1qt. 1/2and1/2, 2-12oz fresh oyster's with liquer. salt and pepper and 1/4 tsp cayenne pepper. melt butter,cook celery and shallot's till soften'd then add 1/2 and 1/2 bring to a boil. then add oyster's and liquer and cayenne . cook till the ends of the oysters curl. soup's on!

gremolota sauce

3 new york strips grilled to taste ,3-4 tbls olive oil, 1tbl red wine vinegar,1/2 tsp sugar,1 clove garlic minced,2tsp lemon zest,1/4 c. chopped parsley or cilantro, 1/2 tsp red pepper flakes.Preheat grill to high then lower one side. brush steak 2 tbl oil and salt and pepper both sides,then grill. wisk 2tbl oil and vinegar to flakes. after steak rest's slice on the diagonal and place some slices over pasta then ladle sauce over steak

tonite I made a new york strip deliciouson the grill m/rare and thought i need a sauce. Bernaise was what I chose.so put 1/4 c & 2 tbl white wine and 3tbl tarrogon vinegar & 2tbl minced shallet in a skillet reduce by half. then put 3 egg yolks,1/4 tsp pepper,1/2tsp garlic salt,4tbl fresh tarrogon, in a blender, then add reduced mix and temper butter & egg mix in blender You have to heat butter for at least 1 min in microwave process for 1 min and sauce should look like thin mayo. with an amazing tarrogon flavor sooo good! enjoy ladle this sauce over steak perhap's over noodles delicious

veggie egg rolls

I found this recipe for veggie egg rolls, less fat because you bake them. 350 degree oven first cook cole slaw pkg ingredients in 1 tsp oil with salt and pepper and 1tbl soy sauce. then wet wrappers put a tbl of slaw mix in wrapper and fold like an envelope wetting all edges. spray cookie sheet and bake rolls for 20 min. turn and bake for another 10 min or till crispy. for dipping sauce use marmalade,honey,and brown mustard to taste. if you like it sweeter just use a 1/2 tsp of mustard.this is a great compliment to coconut shrimp or any asian dish you create enjoy!
