poached salmonw/creamy piccata sauce w/capers

1lb.salmon,2tbl lemon juice,1/4c lite sour cream,2tbl oil,1shallot minced,4tsp capers,1/4 tsp salt,1cwhite wine Poach salmon in 1/2c wine and enough water to cover fish. bring to boil then simmer turn and cover 5. remove from heat. in a skillet add oil and shallots cook to soft then add 1/2 c wine reduce for 1 min then stir in lemon and capers cook 1 min remove from heat and stir in sour cream and salt. top salmon and garnish w/fresh dill serve this also work's with chicken and baby artichokes . as long as you have a protien and something brined it is delicious!
